At Hotel Ikkeikaku, we offer a course meal called "Shark Fin Zanmai" using shark fin from Kesennuma. The main dish, simmered shark fin, is characterized by a rare original bonito stock-based Japanese flavor, which is associated with the "town of bonito". Through repeated trial and error, we were able to reproduce a flavor that is as good as the shark fin that is served at the hotel.

Hotel Ikkeikaku was founded as Ryokan Ikkeikaku in 1916 (5th year of the Taisho Era), and has been in business for 106 years. At that time, the sea was in front of me. The dishes that used plenty of seafood became popular in the local area in no time. Ikkeikaku has continued to change while being constantly damaged by the Chile Earthquake Tsunami, the Miyagi Earthquake, and the Great East Japan Earthquake Tsunami. I made a special course. That is "Shark Fin Zanmai". The main dish, simmered shark fin, features a Japanese-style soup with bonito stock and is an original of our hotel. I wanted to make the boiled shark fin into a retort pack and deliver it to everyone.
